Eight hands,one fire.
Small by design. One hearth, one card, and a rule that has not changed in twenty-eight years: cook what is good today.
Kitchen — 02 / 04
Chef-patron Hélène Roux opened Méridien in a former sail-maker’s workshop on the Saône, with eight covers and no printed menu.
She had spent nine years in kitchens that plated to a photograph. Méridien was the argument against that: a room where the card is written after the morning market, not before it.
The brigade is still eight. Everyone works the hearth in rotation, and everyone writes — a dish stays on the card only as long as the ingredient is at its best, which is rarely more than a fortnight.
The second star came in 2011. The kitchen did not get bigger.

Every course a small argument for slowing down.— Le Guide · Two Stars
Where it
comes from.
Almost everything on the card travels less than fifty miles to reach it.
The market
Four mornings a week at Les Halles and the quai. The card is written on the walk back.
The growers
Eleven producers within the Rhône valley, most of them for over a decade. Vegetables arrive the day they are cut.
The hearth
A single wood-fired oven, lit at seven each morning and never rushed. Beech and old vine.
